Mini Spinach and Feta Quiches

Ingredients

• 1 refrigerated pie crust
• 4 large eggs
• ½ cup milk
• 1 cup fresh spinach, chopped
• ½ cup crumbled feta cheese
• Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F (190°C).
2. Roll out the pie crust and cut circles to fit a muffin tin. Press each circle into the tin to form mini crusts.
3. In a bowl, whisk eggs, milk, salt, and pepper. Stir in spinach and feta.
4. Pour the egg mixture into the crusts, filling each about ¾ full.
5. Bake for 18-20 minutes or until the centers are set. Cool slightly before serving.
