Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.3. Add the cold butter cubes to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.4. Stir in the heavy cream, vanilla extract, and crushed freeze-dried strawberries until just combined.5. Drop spoonfuls of dough onto the prepared baking sheet. Sprinkle with extra sugar.6. Press a couple of fresh strawberry slices into the top of each cookie7. Bake for 10-12 minutes, or until the cookies are lightly golden around the edges.8.
