Red Velvet Cupcakes with Cream Cheese Frosting

Ingredients

• - 1 1/2 cups all-purpose flour
• - 1 cup granulated sugar
• - 1 teaspoon baking powder
• - 1/2 teaspoon baking soda
• - 1 teaspoon cocoa powder
• - 1/2 teaspoon salt
• - 1 large egg
• - 1/2 cup vegetable oil
• - 1/2 cup buttermilk
• - 1 tablespoon red food coloring
• - 1 teaspoon vanilla extract
• - 1 teaspoon white vinegar

For the Frosting

• - 8 oz cream cheese, softened
• - 1/2 cup unsalted butter, softened
• - 4 cups powdered sugar
• - 1 teaspoon vanilla extract
• - Pinch of salt

Instructions

1. 1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
2. 2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cocoa powder, and salt.
3. 3. In a separate bowl, beat together the egg, oil, buttermilk, red food colouring, vanilla extract, and vinegar.
4. 4. Add the wet ingredients to the dry ingredients and mix until just combined.
5. 5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
6. 6. Bake for 18-20 minutes, or until a toothpick inserted into the centre comes out clean.
7. 7. Cool the cupcakes completely on a wire rack before frosting.

For the Frosting

1. 1. Beat together the cream cheese and butter until smooth and creamy.
2. 2. Gradually add powdered sugar, 1 cup at a time, and continue to beat until smooth.
3. 3. Add vanilla extract and a pinch of salt, then frost the cooled cupcakes.
