Salmon is rich in omega-3 fatty acids, which help reduce inflammation, improve heart health, and promote muscle recovery. Pairing it with fiber-rich veggies and brown rice provides long-lasting energy.
Cook mode Prevent screen from turning off Instructions 1. Prepare the rice: Cook the brown rice (or wild rice) according to package instructions. 2. Prepare the salmon: Preheat the oven to 400°F (200°C). Place the salmon fillets on a baking sheet, drizzle with olive oil, and season with salt, pepper, and lemon zest. Bake for 12-15 minutes until cooked through and flakey. 3. Roast the vegetables: Toss the carrots, zucchini, and red bell pepper in olive oil, salt, and pepper. Roast in the oven for 15-20 minutes, stirring halfway, until tender and caramelized. 4. Assemble the bowls: Divide the brown rice, roasted veggies, and salmon filets into meal prep containers. You can squeeze fresh lemon juice over the top for extra flavour. 5. Store: Store in the fridge for up to 4 days. Reheat in the microwave or oven when ready to eat.
