Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.2. In a medium bowl, whisk together flour, baking soda, and baking powder.3. In a large bowl, beat butter and sugar together until creamy. Add egg, vanilla extract, and almond extract (if using), and mix until combined.4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.5. Roll the dough on a lightly floured surface to about 1/4 inch thickness.
