Mini Beef Wellington Bites

An elegant take on the classic Beef Wellington, these mini versions are ideal for impressing guests with sophisticated flavours in bite-sized portions.

Ingredients

• - Puff pastry sheets
• - Beef tenderloin (cut into bite-sized pieces)
• - Mushrooms, finely chopped
• - Prosciutto
• - Dijon mustard
• - Egg wash (egg yolk and water)

Instructions

1. 1. Sear the beef tenderloin pieces in a hot pan, then coat each with a thin layer of Dijon mustard.
2. 2. Sauté the chopped mushrooms until dry, then layer them onto a slice of prosciutto.
3. 3. Wrap the beef and mushroom mixture in the prosciutto, then in puff pastry.
4. 4. Brush with egg wash and bake at 375°F (190°C) until golden brown.
5. 5. Serve with a small side of horseradish cream or a rich demi-glace.
