Guinness Beef Stew

Ingredients

• 1 lb beef stew meat
• 1 large onion, chopped
• 2 cloves garlic, minced
• 2 carrots, peeled and sliced
• 2 potatoes, diced
• 1 bottle Guinness beer
• 3 cups beef broth
• 1 tbsp tomato paste
• 1 tbsp flour (for thickening)
• Salt and pepper, to taste
• Fresh parsley, for garnish

Instructions

1. In a large pot, brown the beef stew meat in olive oil over medium-high heat.
2. Add the onion and garlic and cook until soft.
3. Stir in the carrots, potatoes, and tomato paste, then sprinkle with flour and stir to combine.
4. Pour in the Guinness beer and beef broth, bringing it to a boil. Reduce heat and simmer for 2-3 hours, until the beef is tender.
5. Season with salt and pepper and garnish with fresh parsley before serving.
