Cloud Bread – Feels Like Eating a Cloud
Super fluffy and light, and extra delicious - this cloud bread is amazing and only THREE ingredients! Now, even though it’s only got a few ingredients, you have to follow the directions exactly, or it won’t work! I discovered this the hard way…the first pic below was my first attempt at cloud bread - whoops! It’s ok, because I just tried again…and was much more successful! Here’s what I learned along the way!
Make sure the bowl you mix the egg whites in is SUPER clean and dry! Even one little drop of water will ruin the whole thing!
Make sure your eggs and cream cheese are at ROOM TEMPERATURE! It will all come together much more easily that way.
Be super careful to not over mix the egg whites when you fold them into the yolks - I think that’s what happened to me the first time. The batter should be just barely mixed, and still quite firm. It should not be runny at all!

You can jazz up your cloud bread with different flavours (add some sugar and cinnamon for a sweet version, or Italian seasoning for a savoury version, or even a bit of food colouring!)

I’m telling you, it’s like literally biting into a cloud. It’s kind of like a light, airy bread, but wayyyy cooler. You can eat it with jam or make little sandwiches with it (I just eat it plain because I'm a purist).
