Fall meets Crumbl with these Pumpkin Cookies topped with a luscious cream cheese frosting. This cookie is soft, spiced just right, and perfect for celebrating the Fall or even enjoying on Chinese New Year!
Cook mode Prevent screen from turning off Instructions Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a medium bowl, whisk together  flour ,  baking soda ,  baking powder ,  cinnamon ,  nutmeg , and  salt . In a large bowl, cream together  butter  and  sugar  until fluffy. Beat in the  egg , followed by the  pumpkin puree  and  vanilla extract . Gradually add the dry ingredients to the wet ingredients and mix until smooth. Scoop dough onto the prepared baking sheet (about 2 tbsp per cookie) and space them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden. While the cookies cool, prepare the  cream cheese frosting  by beating together the  cream cheese ,  butter ,  powdered sugar , and  vanilla extract  until smooth. Frost the cooled cookies, sprinkle with cinnamon and enjoy the pumpkin perfection!
